I’m with you, I definitely lean towards HTML too. A little formatting goes a long way when you're trying to catch someone’s eye, especially with so many emails flying around. I usually keep it pretty simple though , clean layout, a bold headline, maybe a button or two. Less is more. I also always double-check the plain text version just in case!
